Good news! The Tovolo Stainless Steel 12"Dough Whisk has arrived in Singapore. Few weeks ago, when I did a video tutorial using the dough whisk to make the Moist & Smooth Cranberry Yogurt Muffins, some readers have asked me where they can buy this in Singapore. You can now find it at all Robinsons, Metro Centrepoint, Takashimaya, www.tovolo.com.sg and www.hipvan.com. I have done up another video tutorial, this time showing you how to use the dough whisk to make these delicious and healthy 'Wholemeal Cranberry Cream Cheese Non-Knead Buns'.
As introduced before, the dough whisk is also known as the Danish Dough Whisk or Brotpisker in Danish. It is an essential tool for all bakers as it can do chores like mixing muffin batter, mixing heavy dough prior to kneading and other batters which you don't want to beat for fear of toughening your bakes. This specialized baking tool is way better than a whisk and definitely easier to clean too.

Dough Ingredients é¢å¢ææ A: (makes 16 buns å¯å16个å°é¢å ) 210ml lukewarm water å¼æ°´ 20g raw sugar åç³ 3g instant dry yeast å³æº¶é µæ¯ 1/2 tsp salt é£ç 80g honey èç³ 2 eggs 鸡è 50g soft unsalted butter 溶åæ ççæ²¹
Dough Ingredients é¢å¢ææ B: 425g bread flour é«çé¢ç² 75g wholemeal flour å ¨éº¦é¢ç² (can replaced with bread flour, å¯ç¨é«çé¢ç²å代)
Cranberry Cream Cheese fillings èè¶æ¢ å¥¶æ²¹å¥¶é ªé¦ : 250g cream cheese å¥¶æ²¹å¥¶é ª 80g icing sugar ç³ç² 80g dried cranberry èè¶æ¢ å¹²
Method åæ³:
1. Sift the flour, mix well, set aside. 1。é¢ç²è¿ç,æå,å¤ç¨。
2. Put the yeast into the water and mix well. 2。æé µæ¯æ¾å ¥æ°´éæ溶。
3. Mix the eggs, sugar and salt well. Add in the honey, mix well then add the yeast water, mix well again. 3。鸡è,ç³åçä¸èµ·æ æåå,åå å ¥èç³,æååå°é µæ¯æ°´åå ¥åæå。
4. Pour the egg mixture into the flour, use the dough whisk to mix in the flour till well mixed. Then add in the butter and mix well. Cover the bowl and put it into the refrigerator to proof overnight. 4。鸡èç³åå ¥é¢ç²é,ç¨é¢å¢ææ æå¨ç¨åæåè³æ é¢ç²åå å ¥çæ²¹,å次æåå。ç¶åç好çå,æé¢å¢æ¾è¿å°ç®±å·èåé µä¸ä¸ªæä¸。
5. Prepare the cream cheese mixture. Use an electric mixer to mix the cream cheese and icing sugar together until smooth. Divide and put it back to fridge to harden for easier wrapping. 5。åå¤å¥¶æ²¹å¥¶é ªé¦ 。ç¨çµå¨æ æå¨æ æå¥¶æ²¹å¥¶é ªåç³ç²ç´å°æ»é¡º。åå²åæ¾åå°ç®±ä¼æ¯è¾å®¹æå 裹。
6. Next day, take the dough out of the fridge, punch out the air and divide the dough into 16 portions of 60g each. 6。é天ä»å°ç®±æ¿åºé¢å¢,æåºç©ºæ°,åå²åæ16份,æ¯ä»½60å 。
7. Wrap in the dried cranberries and cream cheese, seal the buns and proof for 30 minutes. 7。æ´å½¢å 裹干èè¶æ¢ åå¥¶æ²¹å¥¶é ª, ååé µ30åé。
8. Put a piece of baking paper or mat over the proofed buns and another baking tray on top of it. 8。æ¾ä¸å¤ä¸çç¤çº¸æç¤å«,åæ¾å¤ä¸ä¸ªç¤ç。
9. Preheat oven, bake at 210 degree Celcius for 10 minutes, remove baking tray and paper or mat, bake for another 3~5 minutes . 9。é¢çç¤ç,ç¨210ææ°åº¦çç¤10åé,æç¤çåç¤çº¸æç¤å«æ¿æ,继ç»ç¤3~5åé。
10. Transfer to a cooling rack to let cool.
