This is my third recipe using the SunMoon fruit cups in my bakes. I have informed SunMoon company few weeks ago that one of the three recipes that I have worked out will be an Orange cheesecake.
I didn't plan to use Chia Seed until last weekend, God gave me the inspiration to incorporate this power pack seeds into the cheesecake which I have created specially for Mother's Day. This super healthy cake is a light, refreshing and delicious cake which you can eat without feeling much guilt. There are many benefits of Chia Seeds as you can see from below.

Orange Yogurt Chia Cheesecake
橘å酸奶奇亚乳酪蛋糕
Ingredients: (this makes a 6 inch cake, to make an 8 inch cake, just multiply the amount of each ingredient by 1.78 and round off the decimals)
Crust:
80g Oreo cookies, (about 11 individual pieces without cream) 25g unsalted butter, melted
Filling:
190g Philidelphia cream cheese, soften at room temperature
100g Greek Style Yogurt
1.5 tablespoons Chia Seed
40g Icing Sugar
1 teaspoon Vanilla paste (prefer this than vanilla extract as it is more fragrant and less watery) 7g Gelatin powder
90g Apple Juice from SunMoon fruit cup (60g for soaking Chia Seeds, 30g for Gelatin powder)
Jelly Top & Mandarin Orange for decoration: 4 cups SunMoon Mandarin Orange fruit cups
120g Apple Juice from SunMoon fruit cups
4g Gelatin powder
** If you are living in countries other than Singapore or Indonesia where these SunMoon fruit cups are sold, you can replaced with canned Mandarin Oranges and Pure Apple Juice for this recipe.

80å…‹ 奥利奥饼干,(约11å•ç‰‡,除掉奶霜)
25å…‹ æ— ç›ç‰›æ²¹,èžåŒ–
蛋糕体:
190å…‹ Philidelphia奶油奶酪,软化在室温下

16克奇亚籽 (也å«æ£å¤§ç§åæˆ–é¼ å°¾è‰ç±½,包装注明CHIA SEED)

1茶匙 香è‰ç³Š (比较香也没香è‰ç²¾é‚£ä¹ˆæ°´æ°´çš„)
7克 胶粉
90å…‹ SunMoon æ°´æžœæ¯é‡Œçš„è‹¹æžœæ± (60克泡奇亚籽, 30克泡胶粉)
蛋糕顶的果冻和水果装饰:

4克 胶粉

Crust 蛋糕底部 :
1. Melt the butter using the bain-marie (double boiler) method. (I melt the butter directly over my Brandt induction hob using ultra low heat)

2. Crushed oreo biscuits. I used the blender to crush it to get a finer texture.

3. Mix the melted butter and crushed oreo biscuits together in a bowl. With the back of a spoon, press the biscuit crumbs firmly onto the base of the pan. Chill in the freezer compartment for at least 30 minutes.

1. Soak the Chia Seeds in 60g apple juice, put aside.

2. In another bowl, sprinkle gelatin powder (without stirring) into 30g apple juice, put aside for 10 minutes for grains to swell before setting the bowl over a pot of simmering hot water. Stir with a spoon until gelatin melts, remove and put aside to cool to room temperature.

3. With an electric mixer, beat cream cheese, icing sugar and vanilla paste until smooth. Stop to scrape down the sides if necessary. Then add in yogurt and gelatin and beat till fully incorporated.

4. Using a rubber spatula, mix the swelled Chia Seed into the yogurt cream cheese filling. Pour the mixture into the pan. Smoothen the surface with a spatula and tap the cake pan lightly on the table top. Put into the freezer for half an hour to set.
